Chunky Tomato Sauce
I have been making this recipe for a while. It is so simple, takes just a few minutes to throw a handful of ingredients into the pan to simmer down. I love to eat it with spiralized veggie noodles but you can pair it with real pasta too!
I love making bowls and I recently came across this recipe that an old friend of mine posted on Instagram. To make this: Roast with Avocado oil on a sheet pan any of your favourite veggies. I used Sweet Potato, Peppers, Cauliflower & Mushrooms. Cook Tilapia: season generously with Kosher salt and Paprika on both sides and sear in a pan 3 mins each side. To build: layer kale or spinach or both, some veggies, the tilapia, sliced avocado and radish. Also added is Fermented Cabbage which you can easily make by taking 1/4 head of red cabbage, 1/2 c of water and 1/2 cup rice vinegar. Cover tight and leave in fridge to marinate. Add rice to the bottom of the bowl or spice it up with cajun spices if thats what you love! Enjoy. Recipe from Instagram @lindsaysacks
Asian Turkey Meatballs
I have been making these meatballs for years. Originally saw it on the Skinny Taste website I have adapted it numerous times. Served it with rice, noodles, veggies, in Buddha bowls and with a variety of different dipping sauces. My personal favourite is with Peanut Sauce but the meatballs are also delicious just on their own. I sometimes replace the crumbs with shredded, squeezed zucchini- a good option if you are really on a low carb or low cal program.
Lentil Vegetable Soup
I got this recipe through a Facebook Recipe exchange and I am addicted to it. I love soup and love to keep a hearty, low cal option on hand for lunch or a quick dinner if I'm running out with the kids. Recipe:
2 tbsp EVOO / 1 onion diced / 4 cloves minced garlic/ 1 small sweet potato diced / 1lb carrots sliced / 2 celery stalks chopped/ 1 1/2 C red lentils/ 1 tbsp tomato paste / 1/2 tsp tumeric / 3 drops tobacco/ 2tsp kosher salt / 1/2 tsp pepper/ 8 cups veg stock/ 1 tsp ginger/ 6 C chopped kale/ 2 C red kidney beans
Saute Onion/ Add garlic 2-3 mins/ add potato, carrot, celery 5 mins/ Stir in lentils, add paste, tumeric, tobasco, 1 tsp salt and pepper/ Add stock and ginger. /Bring to a boil, simmer 10 mins/ Add kale and beans, simmer 10-15 mins.
